MIMM {beets}

Hey there friends!

This will be a quick one this morning as I’m lacking in inspiration. Not lacking topics mind you–those are coming full force. I feel like I have 900 million different things whizzing through my brain that I’d love to write about, but every time I sit down I can’t seem to make the words come out.

Anybody else get that way? Its like I have a whole book in there just waiting to come out, and trying to break it down into little digestible posts seems impossible.

(I must admit, after writing that last sentence, I’m hoping I just invoked some sort of prophetic power…)

Anyway, this is Marvelous Monday, and the time for complaining is over! There is so much loveliness in the world to celebrate so lets get to it.

First of all, Tribesports sent me this week’s challenge workout and its looks AWESOME. Even though I still don’t really work out, I like to share these because they always are a break from the normal workout routine, and are really outside the box. Since I know there are some readers of mine who do love a good workout, I try to pass the best ones along.

But seriously, this I might try. Many of the poses are yoga-inspired holds, then go into isometric body-weight movements. Its looks pretty freaking cool, and HARD! The combo of holds going right into isometric movements does some ridiculous things to your muscles and nervous system. Its called the Body Armour workout for a reason!

Also marvelous was getting to go on a date to Whole Foods/GreenLife with my momma last week. Their salad bar never ceases to make me swoon.

Marvelous is BEETS!

Oh em gee guys. I love em. I’ve never had them before last week. My sister used to eat them out of a can, and I thought they smelled like dirt. But I got brave last week, bought some fresh ones, roasted them with olive oil, s&p, sauteed the tops and then made this beautiful and delicious salad.

If you’ve never tried beets, before you go out and eat half your bodyweight in them because they are so freaking delicious, I’m going to share with you a bit of information that I wish someone had shared with me.

Snack plate for lunch! Featuring BEETS! Celery, carrots, apple, hummus and Sunbutter.

You WILL pee funny colors. Do NOT rush to the doctor thinking you have a kidney infection/life threatening illness. I did, and it was pretty hilarious/embarrassing when we finally figured out what the issue really was.

Moving right along, AMAZON is marvelous. This is what happened to my poor Kindle this week…

I was devastated. I’ve had mine for several years and just love it. I called customer service thinking I’d get an automated message guiding me through the reset process that I already tried, and then a polite and impersonal direction to buy a new one because mine is no longer under warranty, and they don’t make that specific style anymore.

Boy was I surprised when at 9pm on Friday night I got a real person on the first ring who guided me through several trouble-shooting options, and then sent me a list of their brand new Kindles that I could buy at a discount. Within 2o minutes I had received notice that my new kindle was being shipped and would arrive by Tuesday. Thank. Goodness.

More marvelous was this outfit I wore to work on Sunday!

I love this skirt, but it feels really “office-y”. I thought I’d have to retire it for the summer, until I saw the idea to add cotton tanks or v-necks to your stuffy pencil skirts to carry them into the hotter months. It turned out to be a pretty good idea!

Speaking of fashion, my friends Rebecca and Sam started a blog at the end of the year, and its so great! These girls have really cool style, and take some serious risks (especially for east TN). You should definitely check them out by clicking HERE!

That’s all I have today guys! Off to sit my ass down and do some serious meditating. I’ve amped up that practice a LOT lately to help carry me through my transition to Utah and beyond.

What’s marvelous about your day?

What’s your favorite way to eat beets?

Any hilarious doctor stories?
